Dirty Rice

1 lb ground beef

1 – 1/2 c beef broth

2 1/2 – 3 c long grain rice

1 small-medium onion

1 bell pepper

1 carton sliced mushrooms

Slap-Ya-Mama seasoning to taste

1 tbsp minced garlic

Salt and pepper to taste

Follow directions on package for rice except stop short of simmering by several minutes. Rice does not need to be completely tender. This is important so it won’t become too tender later.

In large skillet, brown and drain ground beef and set aside. Wipe out excess oil from beef and add a small amount of olive oil. Add onion, bell pepper, mushrooms and garlic to olive oil. (Add the garlic last since it cooks faster). Saute until just beginning to get tender then put beef back in. Add about a cup or so of beef broth and all seasonings and stir well. Allow to simmer on for about 10 minutes then add 2 1/2 – 3 cups rice. (You may need to adjust your beef broth and rice amounts). Stir well again and simmer for several minutes until the rice has absorbed the beef broth and is tender. If desired, top with hot sauce upon serving.
